Garlicky Paprika Shrimp

This flavourful appetizer from Ricardo makes a great addition to a dinner party menu.
4 clove cloves garlic, finely chopped
2 tsp sweet paprika
¼ tsp hot pepper flakes
2 Tbsp olive oil
1 lb(s) peeled shrimp with or without tails
¼ cup dry white port or sherry
1 Tbsp lemon juice
¾ cup chicken broth
¼ cup chopped flat-leaf parsley
1 baguette, thinly sliced
1 pinch Salt and pepperVariation
1. In a skillet over medium heat, soften the garlic with the spices in the oil. Add the port or sherry and let it reduce slightly. Next add the broth and lemon juice. Season with salt and pepper. Bring to a boil remove from the heat.
2. Grill shrimp until cooked and then transfer into sauce. Add the parsley and adjust the seasoning. Transfer to a shallow serving bowl. Drizzle with olive oil if desired. Serve with bread for sopping up the sauce.Variation
1. Prepare recipe as directed, adding raw shrimp to the pan at the same time as adding liquids. Cook shrimp in sauce for approximately 2 minutes, or until cooked through. Remove from the heat. Add the parsley and adjust the seasoning. Transfer to a shallow serving bowl. Drizzle with olive oil if desired. Serve with bread for sopping up the sauce.
