Seafood lovers, ahoy! Gimme Chili Crab is packed with shrimp, oyster sauce, crab, fish sauce and a kick of spice.

Spinach with Shallot and Dried

Clean the crab by pulling off the top shells, being careful to reserve the liquid and fatty contents contained under the shells.
Remove the gills and discard. Cut into quarters.
Combine the garlic, shallots, ginger and chili with a little oil in a food processor or mortar and pestle to form a paste.
Combine the sauce ingredients in a bowl.
Heat the wok over moderately high heat, adding 2 tablespoons of oil. (30 ml)
Add the chili paste and stir fry for 1 minute.
Add the crab and stir fry for 2 to 3 minutes.
Add the sauce ingredients to the wok and bring to the boil. Simmer for 5 minutes.
Add the reserved juices and fatty bits from the crab shell to the sauce, being sure to scrape out the shells as much as possible.
Transfer the crabs to serving dish.
Dissolve the cornstarch in 2 tablespoons of water. (30 ml)
Bring the sauce to a boil, then stir in the cornstarch and water. Stir until thickened.
Add the beaten egg in a stream, and cook for 1 minute.
Pour sauce over crab and garnish with green onion, basil, and cilantro.
Serve with steamed rice.

Heat oil in a hot wok.
Add the minced shallot and dried shrimp. Stir fry until shallot is slightly golden.
Add the spinach, and turn constantly in the wok.
Add the soy and oyster sauce and continue stirring.
Sprinkle sugar and white pepper, and continue to stir until spinach is just wilted.
Remove from wok and plate. Garnish with deep fried onions and serve with the chili crab.
