Golden Pizza's Chopped Salad

A fresh salad packed with two kinds of lettuce, carrot, bell peppers, avocadoes, corn, chick peas and black beans.

Ingredients

¼ heads Romaine lettuce, torn into 2-inch pieces

¼ heads iceberg lettuce, torn into 2-inch pieces

1 oz red pepper, diced

1 oz green pepper, diced

1 oz orange pepper, diced

2 oz fresh carrot, cut into 1/8-inch slices

1 cup fennel, shaved

1 ripe avocado, diced into 1/2-inch pieces

1 Tbsp fresh parsley, chopped

1 Tbsp fresh chives, chopped

1 cup fresh corn niblets, charred

¼ cup cucumber, diced

½ cup chick peas, cooked

½ cup black beans, cooked

salt and pepper to taste

3 oz red wine vinaigrette

Directions

1. Combine all ingredients in a medium sized mixing bowl and toss with red wine vinaigrette. Season with salt and pepper and serve.
