Directions for: Grandma's Cookies and Ice Cream


1 cup butter

¾ cup demerra sugar

¼ cup warm water

1 tsp vanilla extract

1 egg

2 ½ cup flour

1 tsp baking soda

1 tsp salt

2 cup oatmeal

1 cup walnuts, chopped

1 cup shredded coconut

1 cup semi-sweet chocolate chips


1. Preheat oven to 350 degrees Fahrenheit.

2. Beat butter and sugar until fluffy.

3. Add water, vanilla and egg. Beat until combined.

4. Add flour, soda and salt and mix until just combined.

5. Add remaining ingredients and fold until just combined.

6. Let dough rest in the refrigerator for 15 minutes.

7. Drop cookies with a tablespoon onto a greased cookie sheet.

8. Flatten cookies with a fork and bake for about 11 minutes.

9. Serve with a scoop of vanilla ice cream.
