A Mediterranean chopped salad made with Greek vinaigrette.

cups bread, diced into 1-inch cubes

cups rainbow cherry tomatoes, halved

cups cucumber, seeded and diced

cup red pepper, diced 1 inch

cup olives, halved

cup shallots, sliced

Step 1
Preheat an oven to 300°F. Spread cubed bread onto a baking pan. Bake for 15 minutes, until cubes begin to harden on the outside but still slightly soft in the middle. Combine all the ingredients into a large salad bowl. Pour RENÉE’S® Mediterranean Greek Vinaigrette on top and toss to evenly coat. Place in fridge to chill for 30 minutes, or up to 4 hours. Before servings, mix to ensure vinaigrette is evenly coating all the ingredients.
