Greek Salad in Pita
- serves 6
1 ½ Tbsp fresh lemon juice
2 tsp fresh oregano minced
Splash of red wine vinegar
¼ cup olive oil
Salt and pepperSalad
3 ripe tomatoes cut in wedges or multi coloured baby tomatoes cut in half
½ cucumber cut into ¼ inch slices
½ cup kalamata olives
1 cup mixed bell peppers chopped (yellow and red)
½ red onion thinly sliced
½ cup fresh basil leaves roughly chopped
½ cup feta cheese
6 pita bread, cut in half
1. In a jar, shake salad dressing ingredients until evenly combined.Salad
1. Place all vegetables in a bowl and toss with dressing.
2. Crumble feta cheese onto salad.
3. Stuff salad into pita pockets and serve immediately.
