This grilled cheese with caramelized onions is Chuck Hughes' divine tweaked version of the tried-and-true classic sandwich.

Caramelized Onions

2 Tbsp of olive oil (30 ml)

3 large onions, sliced

Salt and pepper

Grilled Cheese

8 thick slices, loaf of bread

¼ cup of butter (60 ml)

2 cup of grated old cheddar cheese (500 ml)

Salt and pepper


Caramelized Onions

1. In a frying pan on medium heat, sauté oil and onions until soft and caramelized, approximately 25 minutes. Season with salt and pepper. Remove from pan and set aside.

Grilled Cheese

1. Generously butter both sides of each bread slice. In between two bread slices, pile caramelized onions in between two layers of cheese.

2. Heat a pan on medium low heat. Grill the sandwiches until the cheese has melted and the bread is golden brown, about 2-3 minutes on each side. Serve alongside Creamy Tomato Soup (See Chuck’s recipe from this episode).
