Citrus-Marinated Pork Loin
Cut pork loin into ½-inch (1 cm) thick slices. In glass bowl, stir together mango juice, lime juice, oil, garlic, salt, oregano and pepper; add pork, turning to coat. Cover and refrigerate for at least 15 minutes or up to 1 hour.
Drain pork; place on greased grill over medium heat. Close lid and grill, turning once, until lightly charred and cooked through, 4 to 6 minutes. Transfer to plate.
Butter one side of each bread slice. In small bowl, whisk mayonnaise and mustard; spread on non-buttered side of bread slices and layer one slice each cheese and ham, two slices pickle, and few slices of pork between the bread slices.
On greased grill over medium heat or using Panini press, grill sandwiches (buttered-side of sandwiches should be on the grill) until heated through, lightly charred, and cheese is melted, 6 to 8 minutes. Turn once, if using grill.
