Grilled Peaches and Chorizo Salad

Sweet, savoury and so pretty to look at, a grilled peaches and chorizo salad becomes the perfect dish for summer evenings.

Directions for: Grilled Peaches and Chorizo Salad


8 cup spring mix or arugula

1 peach, halved

3 Tbsp walnuts, toasted

4 chorizo sausages, pricked with a fork

2 Tbsp extra virgin olive oil

2 tsp Dijon mustard

4 tsp rice wine vinegar

1 Tbsp honey

2 Tbsp fresh mint, chopped

1 Tbsp orange juice

salt and pepper


1. Preheat a lightly oiled grill to medium-high heat. Arrange sausages on the grill and cook for 8 minutes per side. During the last 8 minutes, rub peaches with 1 tablespoon olive oil and arrange on the grill cut side down. Continue to grill until cooked to desired doneness, about 8 minutes.

2. Meanwhile, make the dressing by whisking together, olive oil, Dijon, vinegar, honey, mint, orange juice and salt and pepper.

3. Add spring mix into a salad bowl. Slice grilled peaches and chorizo and add to the salad greens along with the toasted walnuts. Drizzle with dressing and serve topped with freshly ground black pepper.
