4 cup warm cooked chicken, shredded
12 slices Quick Sandwich Bread (see recipe)
1 drizzle Hot Chicken Sauce (see recipe)
1 can (284 ml/10 oz) peas, drained
Hot Chicken Sauce6 Tbsp butter
½ cup flour
1 tsp dry mustard
1 tsp chili powder
¼ tsp paprika
pinch cayenne (or to taste)
4 cup beef broth
1 Tbsp ketchup
1 tsp Worcestershire sauce
½ tsp onion salt
1 pinch Salt and pepper
1. Divide the chicken among 6 slices of bread (about 180 ml/3/4 cup per sandwich). Spoon the sauce over the chicken. Top with 6 more slices of bread. Cover with sauce. Scatter a few peas on each sandwich.
Hot Chicken Sauce1. Melt the butter in a saucepan. Add the flour and cook, stirring constantly, until golden, about 3 minutes. Add the spices and cook for 1 more minute. Add the remaining ingredients and bring to a boil while whisking. Simmer gently, stirring frequently, for about 10 minutes. Adjust the seasoning. Cover and keep warm.
