Ice Cream Topped with Applesauce and Cinnamon

Warm homemade applesauce is added to vanilla ice cream for a super scrumptious treat.

cup Applesauce, recipe follows

- 3 scoops ice cream, vanilla or caramel (or both)
1
pinch cinnamon
Whipped cream, for topping, optional

Applesauce

lb(s) mixed apple varieties (Gala , Honeycrisp , Golden Delicious) peeled cored and cut into eighths

cup apple juice or water
½
lemon, juice
½
cup light brown sugar

tsp cinnamon

Step 1

Warm the Applesauce on the stove or in a microwave. Place the ice cream in a dish. Top with the Applesauce, sprinkle with cinnamon and top with whipped cream if desired.

Step 2

Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.

Step 3

Purée the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate. Yield: 6 to 7 cups.

Step 4

Cook’s Note: When blending hot liquids, first let cool for 5 minutes or so, then transfer to a blender, filling only halfway. Put the lid on, leaving one corner open; this will prevent the vacuum effect that creates heat explosions. Cover the lid with a kitchen towel to catch splatters and pulse until smooth.
