Japanese Sesame Spinach

I used a Japanese grinding bowl to mash the sesame seeds but you can crush them with a regular mortar and pestle. Let the salad sit for a few hours before serving so the flavours have a chance to develop. Yield is 4 servings.

Directions for: Japanese Sesame Spinach


¼ cup white sesame seeds

1 tsp sugar, to taste

2 tsp dark soya sauce

3 Tbsp chicken broth

1 lb(s) fresh spinach, washed, blanched


1. On medium heat, toast the sesame seeds in a dry pan until popping, about 30 seconds.

2. Crush them in a Japanese grinding bowl.

3. Add sugar.

4. Stir.

5. Add the soy sauce and chicken broth.

6. Squeeze spinach dry and chop into 1 1/2-inch lengths.

7. Gently mix the spinach with the dressing.

8. Do not crush.

9. Serve at room temperature.
