Ingredients

12 sheets rice paper

1 cup cooked Soba noodles

1 cup mango, cut into strips

½ cup vegan kimchi

1 cup purple cabbage, shredded

1 cup yellow or red pepper, cut into strips

1 cup avocado, cut into strips

½ cup RENÉE'S® Asian Sesame Sauce

Directions

1. Prepare all of the filling ingredients and keep in the refrigerator until ready to assemble.

2. To assemble; fill a large shallow dish with water. Dip rice paper sheet in water for 2 seconds then transfer to a clean, flat surface. In the centre of the rice paper, place soba noodles, mango, kimchi, cabbage, pepper, and avocado. Fold the two opposite sides of the rice; that are parallel to the filling; into the centre. Then fold up the bottom of the rice paper. Begin to roll up the filling towards to open end, to seal. Set aside and repeat. Serve immediately with a side of RENÉE'S® Asian Sesame Sauce.
