ingredients

Steak and Potato Salad

cup baby spinach (or other salad green)
1 ½
cup leftover boiled potatoes, cut into bite-sized pieces

leftover steak (about 250 g), thinly sliced

Tbsp toasted pine nuts

Tbsp crumbled goat cheese

Tbsp finely chopped sundried tomatoes

Tomato Dressing

Tbsp olive oil

Tbsp red wine vinegar

Tbsp tomato sauce (jarred variety usually used for pasta)

tsp runny honey
Ground black pepper, to taste

Step 1

Put salad ingredients into large bowl.

Step 2

In cup, mix dressing ingredients. Pour over salad. Toss.

Step 3

Divide between salad plates.

Step 4

Mix well.
