Ingredients

Lentil Dip

onion, sliced
3
clove garlic, minced
1 ½
cup green or brown lentils
1
Tbsp madras curry powder
1
lime, zested and juiced
¼
cup olive oil
¼
cup cilantro, chopped
salt, to taste

To Finish

radishes, sliced
pea shoots
crackers
seasonal vegetables

Directions

Step 1

Bring a pot of water with a couple litres of water to a boil. Add lentils and simmer the lentils until tender. Drain and set aside.

Step 2

In a separate pan, sauté the onions and garlic together until very soft and slightly browned. Add the curry powder and cook for another minute, then set aside.

Step 3

Take a food processor, add all of the ingredients and blitz until you create a fine paste.

Step 4

Place the lentils in a deep bowl and arrange the other ingredients on top.
