This poutine swaps out french fries for little potatoes, a tasty and healthy option.

lbs Baby Boomer Potatoes, or your favourite little potato variety

Tbsp canola oil
1
cup white cheddar cheese or cheese curds
½
- 1 cup beef gravy
Kosher salt
Coarse pepper

Step 1
Heat the oven to 400°F (200°C). Cut the potatoes in half. Toss with oil and season with salt and pepper. Place the potatoes cut side down on a parchment-lined baking sheet. Cook in the oven for 15 minutes or until golden brown and tender. While the potatoes are cooking, heat the gravy.
Step 2
When the potatoes are done, pile them on an oven-safe dish. Top with cheese and place back in the oven for five minutes. Remove, cover with gravy and you have the best poutine outside of Québec!
