Lobster Butter

Use this recipe to flavour your favourite chowders, bisques or give it a whirl on a fresh cob of corn.

Directions for: Lobster Butter


shells of 1 cooked lobster, broken in small pieces

½ cup (125 mL) butter


1. Place shells on parchment paper–lined baking sheet. Roast in 300°F (150°C) oven until completely dried out, about 15 minutes. Set aside.

2. In medium saucepan, melt butter over low heat. Add lobster shells; simmer (without boiling) for 20 minutes.

3. Using fine-mesh sieve or cheesecloth, strain into bowl; discarding shells. Cover and refrigerate until needed.
