Directions for: Love Your Lunch Edamame Dip


½ avocado

1 cup shelled and cooked edamame

½ small onion, diced

1 Tbsp chopped cilantro

1 - 2 cloves garlic, minced

juice of half a lime

pinch salt and pepper


1. In a food processor, add avocado, edamame, onion, cilantro, garlic, lime juice and salt and pepper. Process until smooth. Taste and add more salt or cilantro depending on personal preference.

2. Transfer dip to an airtight container and place it in the refrigerator. Chill for an hour and serve with your favourite chips or snack crackers.
