Regular meatloaf elevated to a whole new level. With mozzarella cheese and ham inside, and mushroom soup that makes for great flavour.
Mix together ground beef, egg, bread crumbs and ketchup in a large bowl. If mixture is very moist add some more bread crumbs
Turn onto the counter and flatten meat mixture into a rectangle shape. Approx a thickness of 1/2 an inch.
Lay ham slices onto meat mixture, making sure to overlap.
Sprinkle 1/2 cup of the mozzarella cheese over the ham slices
Roll up starting at the left side rolling towards the right, make sure to seal the end so the cheese and ham doesn’t come out during cooking process
Place into a oven safe dish. Bake at 350ºF for at least an hour, check with meat thermometer that its at least 150ºF. Keep in mind it is NOT done at this point
Open can of mushroom soup and put into a small bowl, pour in milk and mix. Spread this mixture over meatloaf
Sprinkle the remaining cheese over the meatloaf, and put back into oven, probably about 20-30 min more.
Meatloaf is done with meat thermometer is at least 165ºC.
