Mint Lamb Pops with Raita

These snacks are easy and delicious. The lamb is formed into small 'lollipops' and coated and served with raita, a yogurt-based Indian, Pakistani and Bangladeshi condiment.

Lamb Pops

1 lb(s) freshly ground lamb

4 clove garlic, finely minced

2 Tbsp mint jelly

1 bunch fresh mint, very finely chopped

½ tsp salt

¼ tsp pepper

½ cup whole almonds, chopped

Curry Raita

1 cup plain yogurt

½ English cucumber, shredded

1 Tbsp curry powder

juice and zest of 1 lemon

¼ tsp salt


Lamb Pops

1. Preheat your oven to 375ºF and turn on your convection fan if you have one.

2. In a bowl mix the ground lamb with the garlic, mint jelly, mint, salt and pepper. Form into 12 ‘lollipops’ by attaching to small skewers or sticks. Roll the pops in the chopped almonds, then transfer to a baking tray and roast until they’re lightly browned and delicious, about 15 minutes.

Curry Raita

1. Stir all the ingredients together in a small bowl. Present with the lollipops. Serve and share!
