Leaves from two large bunches of mint, chopped

Step 1
Bring the water to a boil and salt it. Pour in the couscous and the olive oil, give a quick stir, cover, and turn off the heat. Let sit about five minutes. Fluff with a fork to break up any lumps. Check the seasonings, stir though the chopped mint, and serve.
