cup finest basmati rice

Tbsp ghee

Tbsp oil
1
large onion, thinly, sliced
1
button mushroom, thinly, sliced
½
cup frozen peas, optional
2
cardamom pod
2
cinnamon, sticks
3
bay leaf
1
tsp salt
1 ½
cup water, add extra if necessary

Step 1
Gently wash rice in warm water 3 or 4 times to wash off excess starches. Soak rice in clean water for 10 to 15 minutes.
Step 2
Wash rice in water 2 more times. Strain through a sieve and set aside.
Step 3
Heat oil on medium heat in a heavy bottomed or non-stick pan. Add whole spices and bay leaves and sauté until slightly brown. Add onions, mushrooms and peas and cook for 2 to 3 minutes. Gently fold in rice. Add salt and water. Cover and cook until all the water is absorbed.
