Nutty Pear Salad with Grilled

Tbsp Dijon mustard

Tbsp vegetable oil

tsp chopped fresh thyme, (or ½ tsp dried)

boneless skinless chicken, breasts

cup torn mixed salad greens
1
pear, sliced
4
oz cold brie cheese, cubed

cup chopped pecan, toasted
Dressing
¼
cup vegetable oil
¼
cup wine vinegar

Tbsp thawed apple, juice, concentrate

Tbsp minced fresh chives

tsp Dijon mustard

clove garlic, minced

tsp granulated sugar

tsp salt

tsp pepper

Step 1
In small bowl, whisk together mustard, oil, thyme, salt and pepper; brush over chicken.
Step 2
Place chicken on greased grill over medium-high heat or under broiler; close lid and cook, turning once, for about 10 minutes or until no longer pink inside.
Step 3
Transfer to cutting board; slice thinly and keep warm.
Step 4
Meanwhile, in large bowl, whisk together oil, vinegar, apple juice concentrate, chives, mustard, garlic, sugar, salt and pepper.
Step 5
Add greens, pear, cheese and pecans; toss to coat.
Step 6
Divide among 4 plates, arranging chicken slices attractively over top.
