4 large baker potatoes, washed

Olive oil

Salt and pepper


1. Preheat your oven to 400°F. Cut each potato into half the long way, then into quarters again the long way, continue cutting to make 8 wedges. Toss the wedges with a splash or two of olive oil, salt and pepper and spread out evenly on a baking sheet. Roast for 15 to 20 minutes, until golden brown on one side. Flip the potato wedges and continue to bake until they are crispy and golden on both sides.
