Oven Roasted Tomatoes with Thyme and Garlic

lb(s) Roma tomatoes, ripe but firm

oz fine sea salt

oz white granulated sugar
1
bunch of thyme, picked
5
clove of garlic, sliced
Olive oil, to taste

Step 1

Preheat oven to 250 degrees F.

Step 2

Line a baking sheet with parchment paper.

Step 3

Wash and dry the tomatoes. Cut them in half lengthwise and remove the seeds.
In a small bowl, mix the salt and sugar with the thyme leaves. Add the tomatoes to a large bowl. Sprinkle with the salt and sugar mixture. Add the garlic slices. Sprinkle with some olive oil and mix well to coat.

Step 4

Place the tomatoes cut side up on the baking sheet lined with parchment paper or on a rack. Bake until tomatoes are cooked through, about 2 hours (depending on the size).
