Pacific Rim Chowder

Directions for: Pacific Rim Chowder


1 oz olive/canola mix

1 can corn (save liquid for after the sauté)

1 ½ cup diced onion

1 ½ cup carrot

1 ½ cup celery

1 ½ cup parboil potatoes

1 tsp toasted ground cumin

2 tsp toasted ground coriander seed

2 tsp sea salt and pepper mix

1 bunch cilantro stalk minced

2 oz crushed garlic

4 oz sweet-chili sauce

2 oz chipotle puree

3 can coconut milk (small)

1 can crushed tomato

1 oz hot sauce

1 oz L&P

Cilantro leaves

Green onion


1. Sauté all the dry ingredients until the veggies are soft, then add wet ingredients and simmer for 15 min. Garnish with cilantro and green onion.
