Panna Cotta

Panna Cotta is a custard set with gelatin. In Italian, Panna Cotta just means “cooked cream.”

ingredients

tsp gelatin powder (12 ml)
1 ½
Tbsp cold water (22 ml)

cup 18% cream (250 ml)
1
cup 35% cream (250 ml)
½
cup sugar (125 ml)
1
vanilla bean, scraped
½
cup sour cream (125 ml)
pinch salt
¼
cup grated coconut, unsweetened (60 ml)
toasted coconut shards, for garnish (optional)

Step 1

In a small bowl, sprinkle gelatin powder over cold water. Let stand for 3 to 4 minutes until absorbed. Set aside.

Step 2

Meanwhile, in a small saucepan combine both creams, sugar, salt, vanilla bean scrapings and coconut over medium heat. Warm gently until just steaming, but not boiling. Turn heat off. Cover and let stand for 5 minutes to steep coconut. Strain and discard coconut. Stir in gelatin.

Step 3

Whisk in the sour cream until smooth. Pour into 4 well-oiled ramekins and chill for at least 3 to 4 hours until set. Unmould onto a plate. Serve with coconut shards.
