An irresistible twist on the crepe, complete with rich batter and decadent peach filling.

Mix dry ingredients.
Mix wet ingredients in a separate bowl.
Add wet ingredients to dry ingredients and whisk until smooth.
Heat crepe pan over medium, coat pan with a little bit of oil.
Pour ¼ cup (60 ml) of batter onto pan; cook until lightly browned on the bottom. Flip over and cook until done.
Repeat until all the batter has been used up.
Whip cream to soft peaks, set aside.
Saute peaches in butter just until warmed through.
Spread honey on each crepe and sprinkle evenly with ground walnuts.
Roll up crepe, top with peaches, whipped cream and one scoop of ice cream per serving.
