Peanut Sauce

½ cup veal stock (125 ml)

¼ cup smooth peanut butter (60 ml)

1 Tbsp soy sauce (15 ml)

1 Tbsp rice wine vinegar (15 ml)

1 Tbsp honey (15 ml)

½ tsp toasted sesame oil (2 ml)

Salt and pepper

Spicy Orange Sauce

¼ cup Mirin (60 ml)

2 Tbsp rice vinegar (30 ml)

1 tsp fish sauce (5 ml)

½ tsp chili flakes (2 ml)

½ tsp Sriracha (2 ml)

Zest of 1 orange

Juice of 2 oranges

1 Tbsp grated ginger (15 ml)

1 Tbsp honey (15 ml)

1 small garlic clove, minced

1 tsp corn starch diluted in a little water (5 ml)


Peanut Sauce

1. In a small saucepan on medium heat, mix all the ingredients. Stir and cook for about 5 minutes until reduced to a creamy sauce. Set aside.

Spicy Orange Sauce

1. In a small saucepan, whisk all the ingredients and bring to a boil. Let simmer for about 1 minute until it thickens. Set aside.
