Butter tarts are a classic Canadian dessert and this recipe makes them hassle free. There’s no need to make perfect miniature tart shells when these ooey gooey squares start with a buttery shortbread crust. They are perfect for holiday cookie or square exchanges.  Enjoy double the treats in half the time!

ingredients

Shortbread Crust

cup unsalted butter
½
cup icing sugar
1 ⅔
cups flour

tsp salt

Filling

cup corn syrup

cup brown sugar

eggs, beaten
¼
cup butter, melted

tsp vanilla

Tbsp white vinegar

tsp salt

cups pecans

Step 1

Preheat oven to 350ºF. Line a 9-x-9-inch baking dish with parchment.

Step 2

Using a hand mixer, cream butter and icing sugar until fluffy, about 1 minute.

Step 3

Add flour and salt and mix on low speed until just combined. Mixture will feel crumbly.

Step 4

Press mixture into baking dish to form an even layer. Bake until edges turn golden, about 20 minutes.

Step 5

While base is baking, combine all ingredients for filling minus pecans. Stir until mixture is smooth and uniform. Stir in pecans then pour over base. Bake in oven until mixture bubbles, about 35 minutes.

Step 6

Remove from oven and let cool completely before cutting and serving.
