Spicy Honey

1 cup honey (250 ml)

1 garlic clove, smashed

1 Tbsp peppercorn (15 ml)

1 Tbsp chili flakes (15 ml)

1 Tbsp smoked paprika (15 ml)

Sea salt

Rock Shrimps

2 lb(s) Rock Shrimps (1 kg)

4 eggs, beaten

1 cup flour (250 ml)

4 cup of corn starch (Maizena) (1 lb)

Salt and pepper

Oil for deep-frying

To Serve


Spicy Honey

1. For the spicy honey, in a saucepan, on medium heat, bring all the ingredients to a boil and let simmer for 2 minutes. Let cool, strain and transfer to a squeezable bottle. Keep aside.

Rock Shrimps

1. For the shrimps, pre-heat the fryer at 360 C.

2. In a bowl, mix together the flour, corn starch, salt and pepper. Coat the shrimps in the eggs mixture, then the corn starch mixture. Deep-fry 2 minutes, season with salt and pepper.

Garnish To Serve

1. Serve immediately after frying and drizzle with the spicy honey and garnish with lemon wedges.
