cup (60 mL) liquid honey

Tbsp (30 mL) barbecue sauce

Tbsp (15 mL) chopped green onions

bag (750 g) McCain® Superfries® Homestyle Red Skin Wedges

Tbsp (45 mL) olive oil, divided
2
large pork tenderloins (about 2 lb/1 kg total)

tsp (5 mL) chili powder, divided
½
tsp (2 mL) smoked paprika

salt and pepper to taste
1
cup (250 mL) broccoli florets
1
cup (250 mL) cauliflower florets
¼
cup (60 mL) shredded cheddar cheese

Step 1

Pre-heat oven to 450°F (230°C).

Step 2

In a bowl, combine honey, barbecue sauce, green onions and garlic; set aside.

Step 3

Bake McCain® Superfries® Homestyle Red Skin Wedges according to package directions.

Step 4

Heat 2 tbsp (30 mL) of olive oil in a large skillet on medium-high heat. Rub tenderloins all over with 1/2 tsp (2 mL) chili powder, smoked paprika, and salt and pepper. Sear tenderloins on all sides, about 2 minutes per side. Place tenderloins on a parchment-lined baking sheet. Bake on the upper rack for 10 minutes. Spoon honey mixture evenly over each tenderloin; bake for 5 to 8 minutes more or until a meat thermometer registers 160°F (71°C) when inserted into the thickest part of the tenderloin. Remove from oven and tent with foil for 5 minutes.

Step 5

Meanwhile, in a skillet, heat remaining oil over medium heat. Toss broccoli and cauliflower with remaining chili powder and sauté for 5 to 8 minutes or until tender-crisp. Remove from heat and sprinkle with shredded cheddar.

Step 6

Serve tenderloin sliced and drizzled with pan juices, McCain® Superfries® Homestyle Red Skin Wedges and cauliflower and broccoli toss. Enjoy!

Step 7

Tip: Mix 1 (15 mL) to 2 (30 mL) tbsp hot sauce with ½ cup (125 mL) mayonnaise and ¼ cup (60 mL) sour cream to make a spicy dipping sauce for your wedges!
