Directions for: Potato Carrot Pancake


3 large eggs, whisked

1 ½ Tbsp flour (22 ml)

1 cup potato, peeled and coarsely grated (squeeze all the moisture out of them) (250 ml)

1 cup carrots, peeled and shredded (squeeze all the moisture out of them) (250 ml)

1 Tbsp onion, grated (15 ml)

Salt and pepper, to taste

cup canola oil (125 ml)

½ cup canola oil (125 ml)

1 cup sour cream (250 ml)

1 cup apple sauce (250 ml)

1 Tbsp chives, chopped (15 ml)


1. In a medium glass bowl combine whisked eggs, flour, grated potato, grated carrot, grated onion and salt and pepper to taste.

2. In a large frying skillet pour oil and heat at high temperature. When oil is hot drop 2-inch coins of batter into the hot oil. Cook pancakes on each side until they are golden brown and the inside has been cooked thoroughly. When cooked, take off the heat and place pancakes on a paper towel. Serve with a sour cream and apple sauce and a few chives sprinkled on them.
