Directions for: Pumpkin Seed Dip


¾ cup pumpkin seeds, lightly toasted

1 clove garlic, sprout removed

½ cup fresh parmesan cheese, grated

1 cup basil leaves, rinsed and chopped

1 ¼ cup 1 1/4 cup rich yogurt (Mediterranean-style)

¼ tsp honey

¼ tsp cayenne pepper

salt and pepper


1. Use a food processor to chop the pumpkin seeds, garlic, parmesan and basil. Pour into a bowl. Add the yogurt, honey and cayenne pepper. Season with salt and pepper.

2. Serve in a small, hollowed-out pumpkin.

3. This dip is delicious with raw vegetables, grissini (Italian breadsticks) or broiled chicken brochettes.
