A traditional French savoury dish featuring a layer of bacon topped with creamy eggs and baked to perfection.
1 baked savoury tart shell
6 slices bacon, cut into paperclip-sized pieces
2 eggs + 2 egg yolks
1 ½ cup heavy cream
Salt and pepper
A pinch of nutmeg
1. Heat the oven to 350°F/175°C. Fry the bacon gently to cook, but not make crisp. Drain on paper towel.
2. Spread over the baked tart shell. Whisk together the eggs, using a fork, then add in the cream. Season with salt, pepper, and nutmeg. Strain into the pastry case and bake until set, about 30 minutes. Serve very hot.
