Quick and Easy Granola Bars

These granola bars are easily customizable - feel free to play with the fruit and nut combinations. Try chopped dried apricots or figs. Make your favourite combination of trail mix or try using almond butter instead.

Directions for: Quick and Easy Granola Bars


3 cups rolled oats

1 cup shredded coconut

3 cups trail mix

½ cup coconut oil

½ cup honey

½ cup brown sugar

1 Tbsp lemon juice

½ cup peanut butter

2 tsp cinnamon

1 tsp ground ginger


1. Preheat oven to 350ºF.

2. In a large bowl combine oats, shredded coconut, and trail mix.

3. In a small pot combine coconut oil, honey, brown sugar, lemon juice, peanut butter, cinnamon and ginger. Bring to a boil, let bubble for 4-5 minutes until slightly thickened.

4. Pour over oat mixture and mix to coat evenly.

5. Pour mixture into a lined 9-x-13-inch baking dish. Place in oven and bake for 20 minutes. Let cool completely before slicing.
