Quinoa Pilaf with Mint, Goat Cheese, Almond Pesto

This ancient grain is a great source of protient and magnesium, perfect for vegetarians.
1 cup quinoa, rinsed in cold water
2 cup water
Salt and pepper
2 large bunches fresh mint leaves, chopped
½ cup whole almonds
¼ cup goat cheese
¼ cup olive oil
1. Pour the quinoa into a small saucepot and begin heating over medium high heat. Stir frequently toasting until it begins to pop and change colour. When it is evenly toasted add the water and bring to a simmer. Add salt and pepper. Reduce the heat and cover with a lid. Simmer until water has been absorbed, about 15 minutes.
2. Meanwhile puree the mint, almonds, goat cheese, olive oil and salt in a food processor until smooth. Serve with the quinoa.
