Rack Of Lamb

Ingredients

rack lamb, trimmed of excess fat and bones frenched

Tbsp olive oil
salt and pepper

Directions

Step 1

Preheat oven to 400 degrees Fahrenheit.

Step 2

Carefully trim the racks, removing long sinew, chine bones and excess fat. Leave ¼ inch of fat on the outside of each rack. Carefully scrape rib bones.

Step 3

In a large ovenproof fry pan over medium high heat add oil. Season the outside of the lamb and carefully sear all sides. Drain off excess fat and place in the oven for 20 minutes. If bones are becoming too brown wrap with foil.

Step 4

When cooked to desired doneness remove lamb from oven and allow to rest for 5 to 10 minutes before carving into individual chops.
