Rainbow Ceviche

Chunks of tuna and salmon "cooked" with salt and sprinkled with cilantro, lime juice, sesame seeds and olive oil.

Directions for: Rainbow Ceviche


3 oz Fresh corvina (or white fish)

1 ½ oz fresh tuna

1 ½ oz fresh salmon

1 Tbsp soya sauce

½ oz white soya sauce

½ oz lime juice

1 Tbsp green and red jalapeno

1 Tbsp red onion

1 tsp chopped cilantro

1 tsp cilantro leaves

Salt to taste

1 tsp black and white sesame seeds

1 oz baked sweet potato

½ tsp olive oil


1. Place tuna and ½ teaspoon olive oil in a small bowl and mix together.

2. In a medium bowl place both of soy sauce, lime juice and mix. Add salmon and corvina and mix the sauces with the fish, add jalapenos, chopped cilantro and red onion, mix together.

3. In a medium plate Place the Corvina long wise follow by the salmon and the tuna on top and add the rest of the sauce into the dish. Sprinkle the sesame seeds over the tuna.

4. Garnish with baked sweet potato and cilantro leaves.
