“A la Plancha” refers to the method of cooking steaks, that has now become our favourite way to cook steaks, beating out grilling. Try it once and you’ll be hooked.

Let the steaks sit at room temperature for 30 minutes to take the chill out of the meat. Coat both sides of each steak with the black pepper.
Heat a cast iron skillet (or several) until very hot – literally until the pan starts to smoke. For each steak, sprinkle 1 1/2 tsp (7 ml) of course salt onto the skillet. Allow the salt to heat up and drop in the steaks. Open a window or turn on the fan!
Allow the steaks to cook for 3 minutes on high heat without being disturbed then turn over. The salt transfers the heat and leaves a crisp, salty, golden crust. Cook the steak 3 minutes further for rare steaks and remove to a plate. Wait at least three minutes before slicing and enjoy!
