Directions for: Roasted Eggplant


1 eggplant, cut into 1 inch circles

3 Tbsp vegetable oil

salt and pepper


1. Preheat oven to 400F and line a baking tray with parchment paper.

2. Place eggplant pieces on baking tray and pierce with a fork.

3. Drizzle oil over eggplant, season with salt and pepper.

4. Roast in oven until eggplant is slightly caramelized and tender, approximately 20 minutes.
