Broiled oysters is one of the best ways you can prepare this treat from the sea. This recipe jazzes up the classic approach by roasting fresh oysters, with chilli oyster butter and a cheesy crust broiled to perfection.

Chili Butter

ounce unsalted butter, softened

tsp chopped parsley

tsp lemon zest
¼
tsp lemon juice
¼
tsp chopped garlic

tsp chipotle chilis, minced

Manchego Crust

¼
cup panko breadcrumbs
¼
cup Manchego cheese, finely grated

fresh Gulf oysters

cups rock salt (1 cup for roasting, 1 cup for presentation)

Manchego Crust, reserved

Step 1

Use a small kitchen-aid mixer to combine ingredients until smooth. Set aside.

Step 2

Finely grate Manchego cheese.

Step 3

Combine Manchego cheese and panko breadcrumbs. Set aside.

Step 4

Crack open oysters using an oyster knife.

Step 5

Pack a sheet-pan with rock salt. Place oysters in salt.

Step 6

Drizzle chili butter into oysters. Top with Manchego crust.

Step 7

Roast oysters in oven 450ºF for 8 minutes.

Step 8

To plate, transfer rock salt to round plate. Arrange oysters in a circular shape. Serve with wedges of lemon.
