Roasted Sweet Potato Aloo Gobi

Michael Smith's take on the traditional Indian dish of aloo gobi, featuring onion, cauliflower, sweet potatoes and chickpeas.

1 onion, chopped

2 medium sweet potatoes, unpeeled and diced in 1/2-inch pieces

1 heads cauliflower, chopped

1 19-oz can chickpeas, drained and rinsed

2 Tbsp curry powder

1 tsp red chili flakes

1 Tbsp cumin seeds

4 Tbsp olive oil


1. Preheat your oven to 375ºF.

2. In a large bowl toss all the ingredients together for the aloo gobi. Transfer to a casserole dish or baking pan and roast, turning if necessary until everything is cooked through and tender, roughly 50 to 60 minutes.
