Roasted Veggie Dress-Up

Add extra flavour to roasted vegetables by tossing them with one of these seasonings before roasting.Each of these mixtures will season 1 pound (500 g) of vegetables. For more, multiply the seasonings accordingly, but use only 1 tablespoon (15 mL) more oil per extra pound.

Roasted Veggie Dress-Up Moroccan Seasoning

2 Tbsp chopped fresh parsley

2 Tbsp olive oil

½ tsp dried thyme

½ tsp ground cumin

1 pinch cinnamon

1 pinch salt

1 pinch pepper

Greek Seasoning

2 Tbsp olive oil

2 Tbsp lemon, juice

2 cloves garlic, minced

½ tsp dried oregano

¼ tsp dried mint

¼ tsp salt

¼ tsp pepper

Parmesan Pepper Seasoning

2 Tbsp grated parmesan cheese

2 Tbsp olive oil

¾ tsp pepper
