Salmon Tartar with Salmon Kelp Caviar

1 lb(s) fresh, good quality salmon
3 ½ oz Salmon-flavoured Kelp Caviar
3 ½ oz Sturgeon-flavoured Kelp Caviar (optional - for decoration)
3 Tbsp lemon juice
2 Tbsp olive oil
1 Tbsp chopper capers
1 Tbsp parsley, chopped
1 small shallot, chopped
salt and pepper to taste
1. Dice salmon in ½ cm size cubes. Add two healthy table spoons of Salmon-flavoured Kelp Caviar. Mix is all other ingredients. Keep aside the Sturgeon-flavoured Kelp Caviar.
2. Put the salmon tartar in a ramekin or a round mold. If using a ramekin flip upside down to form a perfect round shape on a flat plate. Optional - Add a small dollop of Sturgeon-flavoured Kelp Caviar on each serving and enjoy with crackers or toast points.
