1 vanilla bean
3 Tbsp (45 mL) unsalted butter
¼ cup (50 mL) brown sugar, packed
¼ tsp (1 mL) PC® black label Cinnamon
1 pinch salt
½ tsp (2 mL) fresh lemon juice
2 Golden Delicious apples, peeled, cored and cut into thin wedges
2 cups (500 mL) PC® black label Salted Caramel Ice Cream (NEW!)
4 all-butter Belgian waffle cookies
½ cup (125 mL) pecans, toasted
1. Using sharp knife, cut vanilla bean in half lengthwise and scrape seeds from vanilla pod; set seeds and empty pod aside. In large non-stick frying pan, melt butter over medium heat. Stir in vanilla seeds and pod, brown sugar, cinnamon, salt and lemon juice; cook, stirring, until sugar melts. Stir in apples; cover and cook for 6 to 10 minutes or until apples are tender, stirring occasionally to make sure sugar does not burn.
2. Remove pan from heat. Cool for 5 minutes.
3. Put two small scoops of ice cream in each of four bowls. Top with warm apple mixture; garnish each with a cookie and some pecans. Serve immediately.
