Shrimp Po-Boy with Spicy Green Onion Mayo

Shrimp Po'Boy

vegetable oil OR peanut oil, for frying

1 ½ lb(s) large shrimp, deveined


1 ½ cup corn flour

2 tsp cayenne

4 soft rolls, split

1 beefsteak tomato, thinly sliced

8 piece Bibb or butter lettuce

1 lemon, cut into wedges


½ cup mayonnaise

1 Tbsp cilantro

1 Tbsp green onion

½ tsp garlic, minced

1 Tbsp hot sauce


Shrimp Po'Boy

1. Preheat 1-inch of oil in a deep skillet over medium to medium-high heat.

2. Pull tails off shrimp and split them in half, season them with salt and cayenne, then add them to the corn flour. Add breaded shrimp to the hot oil and fry them 5 to 6 minutes or until firm and deeply golden all over.

3. Pile lettuce and tomato on rolls and top with shrimp, douse the shrimp with a little lemon juice.


1. Mix all ingredients for the mayo together and place a spoonfuls of the sauce generously on both sides of the bun. Add the slices of tomato, lettuce and shrimp, serve.
