Slow-Cooker Overnight Breakfast Casserole

Set, sleep and then eat! Just toss the ingredients for this super-simple casserole in your slow cooker and then wake up to find breakfast ready. All you'll need is a cup of coffee.

Nonstick cooking spray

1 (12.3-oz) box frozen waffles, quartered

6 oz precooked sausage links, cut into thirds

¼ lb(s) sliced ham, chopped

1 cup shredded Cheddar

1 bunch scallions, sliced, white and greens parts separated

1 red bell pepper, chopped

4 slices Swiss cheese (about 3 oz)

6 large egg yolks

2 cups half-and-half

¼ cup all-purpose flour

Kosher salt and freshly ground black pepper

Hot sauce, for serving (optional)


1. Coat the insert of a 6-quart slow cooker with cooking spray. Toss the waffles, sausage, ham, Cheddar, scallion whites and bell pepper together in a slow cooker. Lay the Swiss cheese over the mixture.

2. Whisk together the egg yolks, half-and-half, flour, 1 tablespoon salt and 1/4 teaspoon pepper in a medium bowl. Pour over the waffle mixture. Cover and cook until the custard is set, 7 to 8 hours on low. Uncover, sprinkle with the reserved scallion greens and let rest for about 10 minutes before serving. Serve with hot sauce, if using.
