There is nothing like the spicy, smokey flavours of barbecue.

ingredients

lb(s) single center loin pork, roast
4
oz thinly sliced smoked ham
4
oz prosciutto
2
cloves garlic, minced
2
Tbsp olive oil
1
Tbsp Dijon mustard
½
tsp dried rosemary, crumbled
2
tsp chopped fresh rosemary
½
tsp pepper

Step 1

Slice lengthwise down middle of roast almost all the way through.

Step 2

Repeat down both sides of roast; set aside.

Step 3

In bowl, whisk together garlic, oil, Dijon, rosemary and pepper.

Step 4

Brush half all over cut side of pork.

Step 5

Cover with prosciutto slices.

Step 6

Roll up and tie at both ends and in centre with wet kitchen string.

Step 7

Brush outside of roast with mustard mixture.

Step 8

Heat barbecue over high heat.

Step 9

Brown roast on all sides.

Step 10

Turn one side of barbecue off and turn other side down to medium.

Step 11

Place roast on unlit side of barbecue.

Step 12

Close lid and cook for about 1 hour and 45 minutes to 2 hours or until meat thermometer registers 160 degrees F (70 degrees C).

Step 13

Transfer to cutting board and tent with foil; let stand for 10 minutes before slicing.

Step 14

Oven Roast Variation: Cook roast on rack in 325 degree F (160 degree C) roaster for about 50 to 60 minutes or until thermometer registers 160 degrees F (70 degrees C).
