Spicy Dried Pumpkin Seeds

Don’t throw away the seeds when hollowing out a pumpkin for soup, pies or decorations. Those little bundles of nutrients are rich in zinc, fibre and B vitamins and have been shown to help prostate health.

ingredients

Salvaged pumpkin seeds, pulp removed, soaked overnight
Unrefined sea salt*
Cayenne pepper
Dried thyme

Tbsp organic* olive oil

Step 1

Drain soaked pumpkin seeds, rinse and drain again. Lay out on a clean tea towel and pat dry.

Step 2

Place seeds on a sheet pan and drizzle with olive oil. Sprinkle on salt and spices and give a stir. Place in the oven on the lowest temperature it will go (preferably 100 degrees, but some ovens will not go that low). Allow to dry and cook for 12 hours or so (or overnight) until they have become crisp.
